


Blayne’s Chocolate Coconut Raspberry Cookies Recipe

1 1/2 c flour

3/4 c sugar

2/3 c oil

1 tsp vanilla

2 tbsp maple syrup

2 tbsp water (optional)

1/2 c cocoa

1/2 tsp salt, baking powder

2 tbsp raspberry jam, shredded coconut
Set the oven to 180 C. Cream the sugar, vanilla, maple syrup, raspberry jam and oil together in a large bowl. Separately, mix the cocoa, coconut, flour, salt and baking powder. Add the wet to dry and mix until a dough is formed, add the water if necessary. Roll into 1” balls and press onto a baking sheet. Bake for 8-10min and voila: delicious cookies.
